What Is Gelatin?

Gelatin belongs to the protein which is homologous with collagen and is hydrolyzed by the skin bone tendon of animals. Water and inorganic salt of gelatin is less than 16% and protein contents more than 82%. Gelatin is rich in 18 kinds of amino acids which the human body needs. It has many kinds of features like gel property hold water property foam property emulsifying property stability and is usually used as thickener and clarifying agent.
